Crunchy Broccoli Slaw
- 4 broccoli stems
- 12 cup thinly sliced purple cabbage
- 12 cup thinly sliced carrot
- 14 cup thinly sliced red onion
- 1 tablespoon minced cilantro or 1 tablespoon parsley
- 1 teaspoon minced ginger
- 1 tablespoon lime juice
- 1 tablespoon extra virgin olive oil
- 2 tablespoons chopped toasted almonds
- salt, to saste

- Peel the outer layer of broccoli stalks with a vegetable peeler.
- Cut the stalks into matchsticks.
- Combine with the next four ingredients.

- Blend the lime juice and olive oil.

- Mix together with the vegetables until lightly coated.
- Add salt to taste and sprinkle with almonds.
