Crispy Lemon Pepper Fish Bites

  1. Heat oven 450 degrees F. Line large baking sheet with aluminum foil.
  2. Place metal cooling rack on top of baking sheet.
  3. Spray cooling rack with no-stick cooking spray; set aside.
  4. Cut fish into bite-sized (2x1-inch) pieces.
  5. Pat fish bites dry with paper towel.
  6. Combine bread crumbs, lemon zest, parsley, pepper and salt in shallow bowl; mix well.
  7. Stir together melted butter and lemon juice in another shallow bowl.
  8. Dip each fish bite into melted butter and lemon juice; then into bread crumb mixture, coating all sides of fish and shaking off excess.
  9. Place coated fish bites onto prepared cooling rack.
  10. Bake fish bites 12-14 minutes or until fish flakes easily with fork.
