Crispy Lemon Pepper Fish Bites
- 1 pound cod fillets, thawed, if frozen
- 1 cup panko bread crumbs
- 1 tablespoon freshly grated lemon zest
- 1 teaspoon dried parsley
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon salt
- 1 Half Stick (1/4 cup) Land O Lakes Butter with Olive Oil & Sea Salt, melted
- 1 tablespoon fresh lemon juice
- Heat oven 450 degrees F. Line large baking sheet with aluminum foil.
- Place metal cooling rack on top of baking sheet.
- Spray cooling rack with no-stick cooking spray; set aside.
- Cut fish into bite-sized (2x1-inch) pieces.
- Pat fish bites dry with paper towel.
- Combine bread crumbs, lemon zest, parsley, pepper and salt in shallow bowl; mix well.
- Stir together melted butter and lemon juice in another shallow bowl.
- Dip each fish bite into melted butter and lemon juice; then into bread crumb mixture, coating all sides of fish and shaking off excess.
- Place coated fish bites onto prepared cooling rack.
- Bake fish bites 12-14 minutes or until fish flakes easily with fork.
