Ramps and Mushroom Consomme Butter Stir-fry
- 4 bunches Ramps (or alpine leek)
- 1 Mushrooms (Shimeji, maitake, etc.)
- 2 tsp Consomme granules
- 5 grams Butter
- 1 Vegetable oil
- 1 Salt and pepper
- Wash the ramps well, squeeze them out, then slice the large stalks in half.
- Heat some oil in a frying pan, and stir-fry the mushrooms and ramps.
- Season with salt and pepper.
- Look at the stalks rather than the leaves to decide when they are done.
- Even if you use a lot, they will reduce greatly in size, just like in the photo.
- Turn the heat to low, and add the consomme granules and butter.
- Quickly stir-fry everything together, and it's done.
