Ramps and Mushroom Consomme Butter Stir-fry

  1. Wash the ramps well, squeeze them out, then slice the large stalks in half.
  2. Heat some oil in a frying pan, and stir-fry the mushrooms and ramps.
  3. Season with salt and pepper.
  4. Look at the stalks rather than the leaves to decide when they are done.
  5. Even if you use a lot, they will reduce greatly in size, just like in the photo.
  6. Turn the heat to low, and add the consomme granules and butter.
  7. Quickly stir-fry everything together, and it's done.
