Mini Cheesecakes

  1. Soften both packages of cream cheese in a large bowl in microwave for about 2 minutes on medium power.
  2. Add sugar and fold in.
  3. Stir in chocolate chips until evenly distributed.
  4. Stir in eggs one at a time.
  5. Line muffin pans with paper baking cups.
  6. Put a whole Oreo in each cup.
  7. Pour batter in each cup, about 3/4 full.
  8. Bake in a 325 degree (175 C.) F. oven for 25-30 minuntes or until lightly browned.
  9. Let cool in the pans for 15-20 minutes before removing.
  10. Best if served refrigerated.
  11. Makes 15-20 servings.
