Lemon Chicken with Snow Peas & Peppers
- 1/2 cup Philadelphia Cream Cheese Product
- 1/2 cup milk
- 1/4 cup 25%-less-sodium chicken broth
- 2 tsp. zest and 1 Tbsp. juice from 1 lemon Safeway 4 ct For $5.00 thru 02/09
- 1 lb. (450 g) boneless skinless chicken breasts, cut into strips
- 1 cup snow peas, trimmed
- 1 cup yellow pepper strips Target 1 pkg For $2.99 thru 02/06
- 1 clove garlic, minced
- 2-2/3 cups hot cooked long-grain white rice
- Mix cream cheese product, milk, broth, lemon zest and juice until blended.
- Cook chicken in large nonstick skillet on medium-high heat 5 min.
- or until lightly browned, stirring frequently.
- Add peas and peppers; cook and stir 2 to 4 min.
- or until chicken is done and vegetables are crisp-tender, adding garlic for the last minute.
- Stir in cream cheese mixture; cook 3 to 4 min.
- or until slightly thickened and heated through.
- Serve over rice.
