Mozzarella and Roma Tomato Stuffed Vine Leaves
- 12 preserved vine leaves, drained, rinsed and patted
- dry
- 1 cup (250) fresh roma tomatoes, finely diced
- 1 cup (250) Tre Stelle Shredded Mozzarella
- 1/4 cup (50) fresh mint, finely chopped
- 1 clove garlic, minced
- 1 tsp. (5) fresh lemon rind, grated
- 2 tbsp. (25) olive oil
- salt and pepper to taste
- sliced lemon for garnish
- In a medium bowl combine tomatoes, mozzarella, garlic, lemon rind, salt and pepper and mint; set aside.
- Place vine leaves on a flat surface and place a teaspoon of filling on the stem end of each leaf.
- Roll up firmly turning edges as you roll.
- In a medium skillet add oil and place vine leaf parcels in pan to warm gently on each side.
- Garnish with lemon slices and serve immediately.
- Makes 12 parcels.
