Mozzarella and Roma Tomato Stuffed Vine Leaves

  1. In a medium bowl combine tomatoes, mozzarella, garlic, lemon rind, salt and pepper and mint; set aside.
  2. Place vine leaves on a flat surface and place a teaspoon of filling on the stem end of each leaf.
  3. Roll up firmly turning edges as you roll.
  4. In a medium skillet add oil and place vine leaf parcels in pan to warm gently on each side.
  5. Garnish with lemon slices and serve immediately.
  6. Makes 12 parcels.
