Roasted Zucchini Salad

  1. Heat oven to 425 degrees F.
  2. Toss vegetables with dressing; spread onto on foil-covered rimmed baking sheet sprayed with cooking spray.
  3. Bake 25 min., stirring after 10 min.
  4. Cool completely.
  5. Transfer vegetables to large bowl.
  6. Add cheese and mint; mix lightly.
