Jambalaya Grits
- 2 Tablespoons Canola Or Olive Oil
- 1 whole Medium Green Pepper, Diced
- 1 whole Medium Onion, Diced
- 2 Tablespoons Cajun Jambalaya Seasoning
- 1 cup Quick-cooking Grits
- 3 cups Chicken Broth
- 1 can (14.5 Oz. Can) Diced Tomatoes
- 1 package (16 Oz. Package) Smoked Turkey Sausage, Sliced
- 3 cups Cooked Chicken Shredded
- In a large pot, stir fry pepper and onion in oil until onion is translucent.
- Add seasoning and grits.
- Cook and stir for 5 minutes or until grits are thoroughly coated with seasoning and are slightly toasted.
- Add broth and tomatoes.
- Cover and cook on medium low heat for 5 minutes.
- Add chicken and sausage.
- Stir and cook for 5 minutes until heated through.
