Marty's Creamy Pineapple Sorbet
- 1 12 cups pineapple chunks
- 13 cup fat free artificially sweetened pina colada yogurt, coconut yogurt or 13 cup vanilla yogurt
- 1 teaspoon lemon juice, preferably fresh squeezed
- 1 -2 teaspoon sugar substitute, to taste (opt, 1-2 packets)
- Place the pineapple in the bowl of a food processor fitted with a chopping blade.
- Pulse, scraping down the sides of the bowl as needed, until finely chopped.
- Add the yogurt and lemon juice.
- Process, scraping down the sides of the bowl again, until very smooth.
- Stir in the sugar substitute, if desired.
- Spoon into 2 martini glasses or dessert bowls.
- Serve immediately.
