Marty's Creamy Pineapple Sorbet

  1. Place the pineapple in the bowl of a food processor fitted with a chopping blade.
  2. Pulse, scraping down the sides of the bowl as needed, until finely chopped.
  3. Add the yogurt and lemon juice.
  4. Process, scraping down the sides of the bowl again, until very smooth.
  5. Stir in the sugar substitute, if desired.
  6. Spoon into 2 martini glasses or dessert bowls.
  7. Serve immediately.
