Pumpkin Salad
- 300 g pumpkin/kabocha squash, cut into bite sized pieces
- 2 slices ham, torn into pieces by hand
- 2 bouillon cubes (soup stock)
- 10-20 g cream cheese (if you have and like)
- 2 Tbsp mayonnaise, to taste
- 1-2 sprigs parsley, chopped
- to taste salt, pepper
- Add the pumpkin and bouillon cubes (soup stock) to just enough cold water to cover and then bring to a boil until cooked.
- Drain well and immediately mash them.
- Combine all ingredients in a bowl and season them with salt and pepper.
