Vegetable Au Gratin Recipe
- 2 tbsp. butter
- 3 tbsp. flour
- 1 c. evaporated lowfat milk, diluted with 1 c. vegetable broth
- 1 teaspoon salt
- 1/2 c. grated Velveeta cheese
- 1 (16 ounce.) pkg. mixed vegetables, cooked
- 1/2 c. buttered bread cubes, more if you like
- Heat butter, blend in flour.
- Remove from heat and gradually add in diluted lowfat milk.
- Return to heat and cook till thickened; add in cheese and continue cooking and stirring till cheese is melted.
- Place vegetables in buttered casserole, pour cheese sauce over all.
- Top with buttered cubes.
- Sprinkle with paprika.
- Bake 15-30 min at 375 degrees.
