  2. Finely slice the cucumbers, rub with salt, and squeeze out the liquid.
  3. Cut the eel into small pieces.
  4. Julienne the shiso leaves.
  5. Mix the eel with the vinegared sushi rice.
  6. Scatter the cucumber, shiso leaves, and white sesame on top.
