Beef & Chorizo Chili Cheese Tacos with Chipotle Mayo

  1. For the tacos: Preheat a large skillet to medium-high heat.
  2. Add olive oil, beef, chorizo, salt and pepper.
  3. Saute beef and chorizo until cooked through, about 7 minutes.
  4. Drain liquid from the skillet and set aside.
  5. To assemble tacos, place some of the chorizo/beef mixture onto a flour tortilla.
  6. Top meat mixture with chili, cheese, fritos, jalapenos, and chile.
  7. Garnish with chipotle mayo on top.
  8. Repeat process until all meat mixture has been used.
  9. For the chipotle mayo: In a bowl, mix ingredients together.
  10. Set aside until ready to top tacos.
