Florey'S Barbecue Sauce
- 1 medium onion (Vidalia in season)
- 3 Tbsp. regular oil
- 1/4 c. red wine vinegar
- 1 c. water
- 2 c. bottled chili sauce
- 3 Tbsp. Worcestershire sauce
- juice of 2 lemons
- 1 Tbsp. dry mustard
- 1 Tbsp. paprika
- dash of cayenne pepper
- 2 Tbsp. cognac (optional)
- salt and freshly ground pepper
- 2 cloves minced garlic
- 1/3 c. firmly packed brown sugar
- Heat the oil and saute the onion in a large stainless steel skillet over medium heat until it begins to brown.
- Add all other ingredients and bring to a boil.
- Lower heat and simmer for thirty minutes.
- Sauce may be used right away or placed in a covered glass jar.
- Store in refrigeration for one month.
- Great on chops, poultry and especially ribs.
