Maehaen Beef (Filler For Burritos) Recipe
- 1 chuck roast
- 2 lg. Spanish onions
- About 3 cloves garlic
- 1 tbsp. oil
- 1/8 teaspoon cumin
- 3 lg. tbsp. mild red chili pwdr
- 1 can minced green chiles
- Brown roast and cover with water.
- Cook slowly till roast falls apart (about 3 1/2 hrs).
- Cut up or possibly pull apart with forks.
- Should be stringy.
- Leave it moist with some broth.
- Add in rest of ingredients and cook another 30 min.
- Roll into tortillas - add in grated Cheddar cheese if you like.
- Optional: Lowfat sour cream, minced tomatoes, minced green onion spread on top.
- Enjoy!
