Cool Chicken Pita
- 2 cups honeydew melon, cubed
- 1 cup cucumber, finely chopped
- zucchini, finely chopped
- 14 cup thinly sliced green onion
- 2 cups cooked chicken, shredded rotisserie chicken
- 13 cup lime juice
- 2 tablespoons canola oil
- 2 tablespoons water
- 2 tablespoons snipped of fresh mint
- 1 tablespoon sugar
- 18 teaspoon black pepper
- 6 whole-grain pita bread rounds
- In a large bowl, todd together the hineydew, cucumber, zucchini, green onions, and chicken.
- For dressing, in a screw top jar, combine lime juice, oil, water, mint, sugar, and pepper.
- Cover and shake well.
- Drizzle dressing lightly over the melon mixture.
- Toss to coat.
- Divide mixture among 6 pitas.
