Pizza Tomatoes
- 4 cup grape or cherry tomatoes
- 1 shallot, sliced
- 2 cloves,of garlic, minced
- 1/4 tsp black pepper and salt to taste
- 1/4 tsp red pepper flakes
- 1/2 tsp Italian dry seasoning bnb
- 1 tbsp chicken broth
- 1 tbsp cream, heavy, light or half and half. I used heavy
- 12 thin slices of pepperoni
- 8 oz ltalian 5 cheese blend, shredded
- 1/4 cup fresh chopped parsley
- Preheat oven to 450.
- Spray a baking dish dish with non stick spray
- In a large skillet on low heat cook pepperoni until.crisp, remove to paper towels to drain
- In skillet pepperoni was cooked in add tomatoes, shallot, garlic, salt, pepper, red pepper flakes and Italian seasoning.
- Cover and cook on medium, stirring often until tomatoes are tender but still.hold their shape, about 10 to 15 minutes
- Add broth and cream and bring just to a simmer, then remove from heat and transfer to prepared baking pan
- Evenly top tomatoes with the cheese then.parsley and pepperoni.
- Cook in hot oven just until cheese melts a about 5 minutes
- This dish can be served as a side vegetable, or as an appetizers with crisp bread rounds to spoon it on.
- It can even be a .main dish if you serve it over pasta or rice!
