Almu's chicken casserole

  1. Heat oven to 140 C
  2. Heat oil in a pan.
  3. Add garlic and when it starts going golden add the chicken and brown it all over.
  4. Add pepper.
  5. Reserve in a flame proof casserole.
  6. Add onion well chopped and sautee until brown and soft.
  7. Add a handful of mixed vegetables and sautee for 2 minutes.
  8. Chop piquillo peppers and add at the end to the veg mixture
  9. Add vegetables and stock to the chicken in the casserole and cook until tender.
  10. About 40 minutes in the oven.
  11. Serve with rice or mashed potatoes or green vegetables or salad.
