Almu's chicken casserole
- 6 skinless chicken thighs
- 1 tbsp olive oil
- 1 clove garlic
- 3 piquillo pepper
- 300 ml chicken stock
- 1 cup mixed frozen vegetables
- 1 chopped onion
- 3 tinned piquillo peppers sliced
- Heat oven to 140 C
- Heat oil in a pan.
- Add garlic and when it starts going golden add the chicken and brown it all over.
- Add pepper.
- Reserve in a flame proof casserole.
- Add onion well chopped and sautee until brown and soft.
- Add a handful of mixed vegetables and sautee for 2 minutes.
- Chop piquillo peppers and add at the end to the veg mixture
- Add vegetables and stock to the chicken in the casserole and cook until tender.
- About 40 minutes in the oven.
- Serve with rice or mashed potatoes or green vegetables or salad.
