Healthy Veggie Fajitas Recipe

  1. Start by pre-heating a large skillet or wok over medium heat.
  2. Set oven on lowest temp and throw some tortillas in there.
  3. Slice the onion and mince garlic
  4. Add olive oil to the pan and add onion.
  5. While onion cooks, slice whole zucchini so that you have thin round pieces.
  6. Check on tortillas.
  7. Make sure you flip them and don't overcook.
  8. You just want them heated through.
  9. Add mushrooms and zucchini to the pan.
  10. Cook until tender, about 6 min.
  11. Squeeze in lime juice
  12. Add garlic, cumin the last two min.
  13. Add salt and pepper to taste.
  14. Put some of the veggie mixture on a tortilla and garnish with cilantro.
  15. You can always add sour cream, cheese or anything else (for a less healthy version).
