Lemon-Buttermilk Mashed Potatoes
- 2-1/2 lb. Yukon Gold Potatoes, peeled & cubed.
- 4 tbsp. Unsalted butter, cubed
- 3/4 cup Buttermilk
- Minced zest of one lemon.
- Salt & White pepper to taste.
- Boil the poatoes in salted water for 15 minutes or until tender.
- Drain off the water and cook off over medium heat for one minute to remove excess water.
- Take off the heat and mash the potatoes with a hand masher or hand mixer.Stir in the butter until it is melted.Then slowly pour in the buttermilk while mashing.
- Add the lemon zest and the salt and white pepper and mash to finish.
