Lemon-Buttermilk Mashed Potatoes

  1. Boil the poatoes in salted water for 15 minutes or until tender.
  2. Drain off the water and cook off over medium heat for one minute to remove excess water.
  3. Take off the heat and mash the potatoes with a hand masher or hand mixer.Stir in the butter until it is melted.Then slowly pour in the buttermilk while mashing.
  4. Add the lemon zest and the salt and white pepper and mash to finish.
