Soft Oatmeal Cookies Recipe
- 1/4 c. butter flavor Crisco
- 3/4 c. sugar
- 2 Large eggs
- 1/2 c. applesauce
- 1 1/2 c. flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 2/3 c. quick oatmeal
- 1/2 c. golden brown raisins
- 1/2 c. minced almonds or possibly use walnuts, dark raisins or possibly chocolate chips, dates etc.
- Cream shortening and sugar.
- Beat in Large eggs and applesauce.
- Sift dry ingredients and add in to creamed mix.
- Stir in the oatmeal.
- Stir in raisins and nuts, drop onto cookie sheet and bake at 350 degrees for about 12 min.
- Store in airtight container in the refrigerator.
- Keeps well for several weeks.
- Use waxpaper between layers.
