Brandy Fruit And Nut Cake
- 3 c. chopped walnuts (English)
- 1 1/2 c. raisins
- 3/4 c. flour
- 3/4 c. sugar
- 1/2 tsp. baking powder
- 1 jar maraschino cherries (whole)
- 3 eggs
- 2 Tbsp. brandy
- Combine fruit and nuts.
- Mix well.
- Mix dry ingredients well. Add to fruit and nuts; coat well.
- Beat eggs until frothy; add brandy.
- Add to mixture; mix well.
- Pour batter into 9 x 15-inch tube pan that has been greased and floured.
- Bake at 300u0b0 for 1 hour and 45 minutes.
- Cool in pan; remove from pan; wrap in cloth that has been dampened with 1/4 tablespoon brandy.
- Wrap in foil; place in refrigerator a couple of days.
- Unwrap; dampen cloth with water, no more brandy.
- Rewrap and set in refrigerator at least a week.
- Very very good.
- Not too boozy.
