Pineapple Orange Mint Jelly Recipe

  1. Combine pineapple juice, orange juice, and water in a large saucepan; bring to a boil.
  2. Add in mint; cover and remove from heat.
  3. Let stand 10 min.
  4. Pour mix through a wire-mesh strainer, discarding mint.
  5. Combine 1 3/4 c. juice mix and sugar in saucepan.
  6. Cook over medium-high heat, stirring frequently, till sugar dissolves and mix comes to a boil.
  7. Add in liquid pectin; bring to full rolling boil, and boil, stirring constantly 1 minute.
  8. Remove from heat.
  9. Skim off foam with a metal spoon.
  10. Quickly pour jelly into warm sterilized jars, filling to 1/4 inch from top; wipe jar rims.
  11. Cover at once with metal lids and screw on bands.
  12. Process in boiling water bath 5 min.
  13. Let stand 8 hrs.
  14. Yield: 4 half pints.
  15. NOTE: If jelly is not processed, store in refrigerator.
