Cheeseburger Soup
- 1 lb ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 3 tbsp butter
- 3 cup chicken stock
- 4 cup diced potatoes
- 1/4 cup flour
- 8 oz velveta cheese
- 1 1/2 cup milk
- 1 tsp basil
- 1/4 cup sour cream
- 1 salt & pepper
- In 5 quart pot, brown beef, drain & set aside.
- Saute onions, carrots, celery and basil in same pan about 5 minutes.
- Stir in flour and add broth, potatoes and beef.
- Cover, reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add cheese, milk, salt & pepper.
- Cook and stir until cheese melts.
- Remove from heat and blend in sour cream.
