Quick Tomato Sauce
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 large garlic clove, minced
- 1 (16 ounce) can plum tomatoes, coarsely chopped with juices
- 12 teaspoon dried basil, crumbled
- 14 teaspoon dried oregano, crumbled
- 1 bay leaf
- 14 teaspoon sugar
- 14 teaspoon salt
- pepper
- In a saucepan over medium heat, warm oil.
- Add onion and garlic and saute until soft, about 5 minutes.
- Meanwhile, puree tomatoes and juices slightly in food processor.
- Add with tomato sauce, herbs, sugar, salt, and pepper to pan.
- Simmer, uncovered, stirring occasionally, until slightly thickened and flavors are blended, 10-12 minutes.
- Remove bay leaf and discard.
- Serve immediately or cover and refrigerate up to 1 week.
