Cream of Shrimps

  1. In a cooking pot, saute the onions and the bell peppers.
  2. When fully caramelized, add the shrimps.
  3. Pour the Heavy Cream and stir.
  4. Add the broth and continue stiring.
  5. Season with the nutmeg, white pepper and salt.
  6. Be careful when seasoning.
  7. When the batter gets thick, flavors tend to concentrate and the cream ends salty.
  8. I suggest to go light with the seasoning.
  9. When the cream gets thick, remove from the burner.
  10. Let it set for 2 mins.
  11. Using a hand whisk, add the mozzarella cheese while stiring with the whisk.
  12. This step is to prevent the cheese to cook quickly and not melt correctly.
