Spinach Cheese Puffies

  1. In a medium bowl, beat eggs and add remaining ingredients and mix well.
  2. Cover and refrigerate 1 hour or until mixture is firm enough to form into balls.
  3. Shape spinach mixture into 1 inch balls and place on buttered cookie sheets, cover and refrigerate or freeze until serving time.
  4. Bake refrigerated puffies on a greased cookie sheet at 350F for 12-15 minutes, 18-20 minutes if frozen, and serve warm.
