Spinach Cheese Puffies
- 2 eggs
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 12 cup onion, finely chopped
- 1 clove garlic, pressed
- 2 ounces cheddar cheese, shredded
- 13 cup creamy bleu cheese salad dressing
- 2 tablespoons butter, melted
- 1 (8 1/2 ounce) package corn muffin mix
- In a medium bowl, beat eggs and add remaining ingredients and mix well.
- Cover and refrigerate 1 hour or until mixture is firm enough to form into balls.
- Shape spinach mixture into 1 inch balls and place on buttered cookie sheets, cover and refrigerate or freeze until serving time.
- Bake refrigerated puffies on a greased cookie sheet at 350F for 12-15 minutes, 18-20 minutes if frozen, and serve warm.
