BBQ Chicken Quesadillas

  1. In a medium bowl, combine shredded chicken and barbeque sauce.
  2. Set aside.
  3. Spray a cast iron skillet with cooking spray and heat over medium-low heat.
  4. Lay one tortilla in the center of the pan.
  5. Spread about 1/4 cup of chicken on the tortilla and top with a sprinkling of red onion and pineapple.
  6. Top generously with shredded cheese.
  7. Lay another tortilla over the top and flatten with a spatula.
  8. Cook for about 2 minutes per side or until crisp, golden brown and heated through.
  9. Repeat with the remaining tortillas and filling.
  10. Serve immediately.
