South Carolinian Scrapple Recipe

  1. In 4 1/2 c. water boil chicken parts till meat is falling off the bones.
  2. Remove chicken, pick off meat.
  3. Strain broth.
  4. Should be 4 c. broth, add in meat, salt, pepper and sage to taste.
  5. Bring to boil.
  6. Slowly stir in 2 c. cornmeal.
  7. Simmer about 15 min, stirring often.
  8. Pour into oiled bread pans.
  9. Cold in refrigerator.
  10. Then slice, dredge in flour and fry lightly.
