Cantaloupe And Avocado Salad Recipe
- 1 x Cantaloupe seeded, peeled, and cut into chunks
- 2 med Avocados peeled, and cut into chunks
- 1 can Diced hearts of palm - (14 ounce)
- 2 Tbsp. Lemon juice
- 1/2 c. Slivered toasted almonds
- 2 Tbsp. Melted butter
- 1 head Any type loose-leaf lettuce
- 6 Tbsp. Lemon juice
- 1/2 tsp White pepper
- 6 Tbsp. Lime juice
- 1/2 tsp Grnd ginger
- Combine cantaloupe, avocado and hearts of palm in a bowl.
- Sprinkle with lemon juice, and chill for one hour.
- Place ingredients for dressing in a bowl, and whisk together.
- To toast almonds, drizzle with two Tbsp.
- melted butter, and bake at 325 degrees for 15 min.
- Tear lettuce into large, bite-size pcs, and line serving bowl.
- Spoon fruit into center.
- Pour dressing over fruit, and sprinkle with almonds.
