Vegan maple breakfast cookies
- 1 cup whole wheat flour
- 3/4 cup oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup apple sauce
- 3 tbsp maple syrup
- 2 tbsp olive or coconut oil
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- Mix all ingredients until wet.
- The dough should form soft balls.
- If dough is too dry, add a tablespoon of almond milk.
- If it is to wet, add more oats.
- Place about 16 balls on a greased baking sheet.
- Bake for 8-10 minutes at 375F.
