Beer Soda Bread Recipe
- 2 c. whole-wheat flour
- 1 c. unbleached flour
- 6 Tbsp. brown sugar - (packed)
- 1/2 tsp grnd cinnamon
- 1 tsp baking soda
- 2 1/2 tsp baking pwdr
- 1 tsp salt
- 1 Tbsp. caraway seeds
- 1 x egg
- 1/4 c. butter - (1/2 stick) melted
- 1 1/2 c. beer
- 3/4 c. raisins
- 2 Tbsp. natural bran or possibly oatmeal for garnish
- Plump raisins in water for 5 min, drain.
- Stir together whole-wheat and unbleached flours, brown sugar, salt, cinnamon, baking soda, baking pwdr and caraway seeds.
- Make well in center and stir in egg and butter.
- Stir in beer.
- Stir by hand to make soft batter.
- Stir in raisins.
- Spoon into greased 9-inch round cake pan.
- Sprinkle with bran or possibly oatmeal.
- Bake at 375 degrees till top is dry to touch, 40 to 45 min.
- Top will be slightly cracked.
- Remove from oven and cold before serving.
- This recipe yields 6 servings.
- Comments: Do not use green beer in this.
- A robust stout, beer or possibly ale will lend a hearty jolt.
- Serve with a piping warm plate of Irish stew.
