Jackie's Jalapeno Poppers
- 30 jalapenos
- 2 (8 ounce) packages light cream cheese, softened
- 8 ounces sharp cheddar cheese, shredded
- 12 cup light mayonnaise
- 14 ounces pepper bacon
- 1 tablespoon garlic salt
- 2 teaspoons cumin
- salt and pepper
- Preheat oven to 350 degrees.
- Fry and drain bacon.
- Chop into small bits.
- With gloves, cut jalapenos lengthwise and de-seed.
- In a large bowl, mix softened cream cheese, mayo, bacon, cheddar, and spices.
- Mix well until a smooth consistancy.
- Fill jalapeno halves with cream cheese mixture and place on a cookie sheet.
- Bake for 30-40 minutes.
