Almond Cookies
- 2 large eggs
- 1/2 c. almond paste
- 1 recipe basic cookie mix
- 36 whole blanched almonds
- sugar
- Preheat oven to 350u0b0.
- Lightly grease two large baking sheets. In large bowl of electric mixer, combine eggs and almond paste.
- At medium speed, beat 5 minutes or until mixture is light and creamy. Add cookie mix; at low speed, beat until mixture forms a dough. Roll rounded teaspoonful of dough into a ball.
- On a sheet of waxed paper, place sugar.
- Roll dough ball in sugar to coat.
- Place ball on prepared baking sheet; flatten slightly with palm of hand. Gently press an almond into center of dough.
- Repeat with remaining dough, placing cookies about 1 inch apart on prepared baking sheets.
- Bake 12 minutes or until cookies are golden.
- With metal spatula, transfer cookies to wire rack to cool.
- Yields 3 dozen.
