Almond Cookies

  1. Preheat oven to 350u0b0.
  2. Lightly grease two large baking sheets. In large bowl of electric mixer, combine eggs and almond paste.
  3. At medium speed, beat 5 minutes or until mixture is light and creamy. Add cookie mix; at low speed, beat until mixture forms a dough. Roll rounded teaspoonful of dough into a ball.
  4. On a sheet of waxed paper, place sugar.
  5. Roll dough ball in sugar to coat.
  6. Place ball on prepared baking sheet; flatten slightly with palm of hand. Gently press an almond into center of dough.
  7. Repeat with remaining dough, placing cookies about 1 inch apart on prepared baking sheets.
  8. Bake 12 minutes or until cookies are golden.
  9. With metal spatula, transfer cookies to wire rack to cool.
  10. Yields 3 dozen.
