Cheesy English Muffin Stacks
- 1 whole-grain English muffin
- 2 Tbs. finely diced green onion
- 1/4 cup low-fat ricotta cheese
- 2 slices tomato
- 2 slices tempeh bacon
- 2 oz. grated light Cheddar cheese
- Split and toast English muffin in toaster oven.
- Stir green onion into ricotta cheese, then spread mixture onto each English muffin half.
- Top each with 1 slice tomato, 1 slice tempeh bacon, and 1 oz.
- grated light Cheddar cheese.
- Return to toaster oven, and toast 3 to 5 minutes, or until Cheddar has melted.
