Cheesy English Muffin Stacks

  1. Split and toast English muffin in toaster oven.
  2. Stir green onion into ricotta cheese, then spread mixture onto each English muffin half.
  3. Top each with 1 slice tomato, 1 slice tempeh bacon, and 1 oz.
  4. grated light Cheddar cheese.
  5. Return to toaster oven, and toast 3 to 5 minutes, or until Cheddar has melted.
