Grandma Babiracki's Kapusniak Recipe
- 1/2 pound yellow split peas
- 1 pound spareribs or possibly ham bone, plus 3 c. cubed ham
- Whole onion (take out before adding sauerkraut)
- 3 or possibly 4 carrots, shredded
- 1/2 head cabbage, shredded
- 1/2 can sauerkraut, liquid removed
- Salt & pepper to taste
- 1/4 teaspoon caraway seeds
- Lowfat sour cream (optional)
- Cook split peas till soft, using about 2 qts of water.
- Add in the ham, cubed ham and onion and cook the mix with the softened peas.
- Remove the onion and then add in the carrots, cabbage, sauerkraut, salt, pepper and caraway seeds.
- Simmer the mix about 1 1/2 hrs or possibly so till peas are tender.
- Add in more if needed.
- Serve with dab of lowfat sour cream, if you like.
- Serves 8 to 10.
