Strawberry Daifuku: Just Microwave the Shiratamako!
- 150 grams Shiratamako
- 50 grams Granulated sugar
- 200 grams Water
- 1 dash Red food colouring
- 200 grams Koshi-an (I used shiro-an)
- 10 Strawberry (small or medium)
- 1 Katakuriko
- Hull the strawberries.
- Divide the bean paste into 20 g portions.
- Flatten on your hand to make a pancake.
- Wrap the strawberry in the bean paste.
- Make the mochi dough.
- Put the shiratamako and granulated sugar in a bowl.
- Add and mix water gradually.
- Cover with plastic wrap.
- Microwave for about 2 minutes at 500 W. Take out from the microwave and stir.
- Add red food colouring dissolved in a little water (not listed).
- Add colouring until dough becomes the pink colour you like.
- Flatten on your hand to make the dough into a round circle.
- Wrap the bean paste with the dough.
- If it's sticky, coat katakuriko on your hands.
- Flatten on your hand to make the dough into a round circle.
