Strawberry Daifuku: Just Microwave the Shiratamako!

  1. Hull the strawberries.
  2. Divide the bean paste into 20 g portions.
  3. Flatten on your hand to make a pancake.
  4. Wrap the strawberry in the bean paste.
  5. Make the mochi dough.
  6. Put the shiratamako and granulated sugar in a bowl.
  7. Add and mix water gradually.
  8. Cover with plastic wrap.
  9. Microwave for about 2 minutes at 500 W. Take out from the microwave and stir.
  10. Add red food colouring dissolved in a little water (not listed).
  11. Add colouring until dough becomes the pink colour you like.
  12. Flatten on your hand to make the dough into a round circle.
  13. Wrap the bean paste with the dough.
  14. If it's sticky, coat katakuriko on your hands.

  18. Shape into neat round dumplings and serve!
