Corn and Avocado Salsa
- 4 cups Fresh Corn Kernels
- 1 Tablespoon Fajita Seasoning
- 1/2 teaspoons Black Pepper
- 3/4 teaspoons Salt
- 2 Tablespoons Vegetable Oil
- 1 whole Red Bellpepper, Chopped
- 1/2 whole Jalapeno, Seeded And Chopped
- 1/2 cups Green Onion, Chopped
- 1/4 cups Fresh Chopped Cilantro
- 1/4 cups Fresh Lime Juice
- 2 Tablespoons Orange Juice
- 2 whole Ripe Avocados, Diced
- Saute corn, fajita seasoning, salt and pepper in vegetable oil for 6-8 minutes or until corn is golden.
- Let cool.
- Add all other ingredients to mixture except avocado.
- Chill mixture for 30 minutes.
- Stir in avocado just before serving.
- Great with tortilla chips and/or corn chips.
