Cabbage Soup With Apples And Thyme Recipe
- 3 Tbsp. butter
- 1 Tbsp. extra virgin olive oil
- 8 c. thinly-sliced cored green cabbage (abt 1/2 large head)
- 1 lrg onion minced
- 8 lrg fresh thyme sprigs
- 6 c. low-salt chicken broth Salt to taste Freshly-grnd black pepper to taste
- 1 1/4 lb Golden brown Delicious apples peeled, cored, and cut into 1/2" cubes Minced fresh thyme for garnish
- Heat 1 Tbsp.
- butter with oil in heavy large pot over medium-high heat.
- Add in cabbage and onion; saute/fry till vegetables wilt and brown, stirring occasionally, about 15 min.
- Add in 8 thyme sprigs and saute/fry 1 minute longer.
- Add in broth and bring to boil.
- Reduce heat to medium and simmer 5 min.
- Season to taste with salt and pepper.
- (Soup can be made 1 day ahead.
- Cover and chill.
- Rewarm before serving.)
- Heat remaining 2 Tbsp.
- butter in heavy large skillet over medium-high heat.
- Add in apples and saute/fry till brown and tender, stirring occasionally, about 12 min.
- Season with salt and pepper.
- Remove thyme sprigs from soup.
- Ladle soup into bowls; garnish with apples and minced fresh thyme and serve.
- This recipe yields 4 to 6 servings.
- Comments: Thyme really shines in this soup; sauteed apples are an interesting sweet garnish.
