Cabbage Soup With Apples And Thyme Recipe

  1. Heat 1 Tbsp.
  2. butter with oil in heavy large pot over medium-high heat.
  3. Add in cabbage and onion; saute/fry till vegetables wilt and brown, stirring occasionally, about 15 min.
  4. Add in 8 thyme sprigs and saute/fry 1 minute longer.
  5. Add in broth and bring to boil.
  6. Reduce heat to medium and simmer 5 min.
  7. Season to taste with salt and pepper.
  8. (Soup can be made 1 day ahead.
  9. Cover and chill.
  10. Rewarm before serving.)
  11. Heat remaining 2 Tbsp.
  12. butter in heavy large skillet over medium-high heat.
  13. Add in apples and saute/fry till brown and tender, stirring occasionally, about 12 min.
  14. Season with salt and pepper.
  15. Remove thyme sprigs from soup.
  16. Ladle soup into bowls; garnish with apples and minced fresh thyme and serve.
  17. This recipe yields 4 to 6 servings.
  18. Comments: Thyme really shines in this soup; sauteed apples are an interesting sweet garnish.
