Lamb Steak with Red Pepper Relish

  1. In 2-quart saucepan, combine vinegar, sugar,1 teaspoon salt, thyme, and fennel seeds; heat to boiling over high heat.
  2. Add red peppers, apple, and jalapenos; heat to boiling.
  3. Reduce heat and simmer, stirring occasionally, until liquid has evaporated, 15 to 20 minutes.
  4. Keep warm.
  5. Meanwhile, preheat broiler.
  6. Sprinkle lamb with remaining 14 teaspoon salt.
  7. Place lamb on rack in broiling pan.
  8. Place pan in broiler at closest position to heat source and broil lamb 5 minutes.
  9. Turn lamb and broil 5 minutes longer for medium-rare or until desired doneness.
  10. Serve lamb with warm red pepper relish.
  11. Makes 4 main-dish servings.
