Grandma Bernice's Country Cole Slaw Recipe
- 6 c. finely minced cabbage
- 3/4 c. finely minced carrots
- 1/3 c. minced green onion, with tops
- 1 c. whipping cream
- 1/2 c. dairy lowfat sour cream
- 1/3 c. fresh lemon juice
- 3 tbsp. sugar
- 2 tbsp. Dijon style mustard
- 1 1/2 teaspoon caraway seed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Combine cabbage, carrots and green onions in a large bowl.
- Cover and chill.
- Combine whipping cream, lowfat sour cream, lemon juice, sugar, mustard, caraway seed, salt and pepper.
- Beat till almost stiff.
- Cover and chill till ready to serve.
- Just before serving combine cabbage mix and whipping cream mix.
- Toss gently.
- Yields 8 c..
