BBQ Chicken Nachos

  1. Preheat oven to 425 F. On a rimmed baking sheet place tortilla pieces.
  2. Bake about 5 minutes, flip them over and bake 5-10 minutes more until crispy and golden.
  3. Meanwhile, toss chicken with BBQ sauce in a bowl.
  4. Remove tortilla chips from oven when they are done.
  5. On the same baking sheet assemble nachos by layering the ingredients.
  6. Pull half of the chips off of the tray.
  7. On the first layer of chips add a sprinkling of cheddar and pepper jack cheese, chicken, jalapenos and corn.
  8. Repeat layers: chips, cheese, chicken, jalapenos and corn.
  9. Bake for 5 minutes until cheese is melted.
  10. Remove from oven and top with tomatoes, cilantro, onions, green onions and cojita cheese.
  11. Dollop some more BBQ sauce on top if desired and finally finish her off with a squeeze of fresh lime juice.
  12. Enjoy.
