Simply Country Hash-Ramp-Jack Soup #SP5
- 1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
- 3 (15 ounce) cans fat-free chicken broth
- 12 cup ramps, diced (if you can't find ramps, substitute green onions or leeks)
- 1 (8 ounce) bag monterey jack cheese, shredded
- 1 cup heavy whipping cream
- Clean and chop ramps.
- Set aside.
- Set heavy whipping cream out of refrigerator -- bring to room temperature.
- Put 2 cans chicken broth into large (3 qt or larger) pot.
- Bring to a boil.
- Add Simply Potatoes Southwest Style Hash Browns.
- Stir.
- Reduce heat to medium and cook about 20 minutes or until potatoes are tender, stirring occasionally.
- Reduce heat to low.
- Add ramps.
- Stir.
- Add cheese and stir until cheese melts completely.
- Add heavy whipping cream.
- Stir over low heat for about 2 minutes.
- (If thinner soup consistency is desired, pour in the additional can of broth and stir another 2 minutes.
