Simply Country Hash-Ramp-Jack Soup #SP5

  1. Clean and chop ramps.
  2. Set aside.
  3. Set heavy whipping cream out of refrigerator -- bring to room temperature.
  4. Put 2 cans chicken broth into large (3 qt or larger) pot.
  5. Bring to a boil.
  6. Add Simply Potatoes Southwest Style Hash Browns.
  7. Stir.
  8. Reduce heat to medium and cook about 20 minutes or until potatoes are tender, stirring occasionally.
  9. Reduce heat to low.
  10. Add ramps.
  11. Stir.
  12. Add cheese and stir until cheese melts completely.
  13. Add heavy whipping cream.
  14. Stir over low heat for about 2 minutes.
  15. (If thinner soup consistency is desired, pour in the additional can of broth and stir another 2 minutes.
