Blackberry Mint Vinegar (makes a great gift)
- 8 fresh mint leaves
- 5 cup white vinegar
- 1/8 tsp salt
- 1/3 cup sugar
- 2 cup fresh or frozen whole blackberries
- In a large non-aluminum saucepan, combine vinegar, sugar, salt, and blackberries.
- Bring to a boil over medium high heat.
- Boil for 3 minutes.
- Add mint leaves.
- Transfer mixture to a heatproof nonmetal container.
- Cover and let stand at room temperature 3 days to let flavors blend.
- Strain vinegar into gift bottles.
- Store in refrigerator for up to 1 month.
- *This recipe makes about 5 1/4 cups vinegar.
