Blackberry Mint Vinegar (makes a great gift)

  1. In a large non-aluminum saucepan, combine vinegar, sugar, salt, and blackberries.
  2. Bring to a boil over medium high heat.
  3. Boil for 3 minutes.
  4. Add mint leaves.
  5. Transfer mixture to a heatproof nonmetal container.
  6. Cover and let stand at room temperature 3 days to let flavors blend.
  7. Strain vinegar into gift bottles.
  8. Store in refrigerator for up to 1 month.
  9. *This recipe makes about 5 1/4 cups vinegar.
