pork loin steaks with smoked garlic and chive mash with a butter bean and leek cassoulet
- 8 pork loin steaks
- 5 large maris piper potatoes
- 2 tsp smoked garlic paste
- 1 clove garlic
- 1 tin of butter beans
- 1/2 leek
- 1 tsp wholegrain mustard
- 25 ml white wine
- 500 ml double cream
- 25 grams unsalted butter
- 1/3 bunch chives
- Peel and 1/4 pots add to salted water bring to boil simmer until cooked
- While waiting on the pots finely slice leek a puree garlic and sweat off ( no colour)
- Add wine and reduce by 1/2 then add cream
- Stir in mustard and add in drained butter beans and seson
- Heat saute pan to med/high heat drain pots add smoked garlic butter an mash till smooth keep warm
- Oil and season pork place in hot pan for 2-3 mins each side and leave to rest
- Finally add chopped chives to mash and mix well plate up and enjoy
