Chocolate Amaretto Cheesecake
- 1 1/2 c. chocolate crumbs
- 1 c. chopped almonds
- 1/3 c. sugar
- 6 Tbsp. softened butter
- 1 1/2 lb. soft cream cheese
- 1 c. sugar
- 4 eggs
- 1/3 c. heavy cream
- 1/4 c. Amaretto
- 1 tsp. vanilla
- 2 c. sour cream
- 1 Tbsp. sugar
- 1 tsp. vanilla
- In a bowl, combine chocolate crumbs, almonds, sugar and softened butter.
- Pat mixture onto bottom and sides of a buttered 9 1/2-inch spring-form pan.
- Then cream together cream cheese and sugar.
- Beat in eggs.
- Add heavy cream, Amaretto and vanilla. Beat until light.
- Pour batter into spring-form pan.
- Bake at 375u0b0 for 35 to 40 minutes.
- Let stand for 5 minutes.
- Combine sour cream, sugar and vanilla.
- Spread on cake and bake for 5 minutes more.
- Cool on rack completely and chill overnight.
- Remove sides of pan and transfer cake to a stand.
- Press sliced blanched almonds, lightly toasted around top edge.
