Apricot Chutney Recipe

  1. Place all ingredients in large pot.
  2. Stir over medium heat till sugar dissolves.
  3. Bring to a boil, stirring often.
  4. Simmer, uncovered, for about 1 hour till thick.
  5. Stir more often as it thickens to prevent scorching.
  6. Pour into warm sterilized jars to within 1/4 inch of top.
  7. Seal.
  8. Yield: 3 1/2 pints
