Apricot Chutney Recipe
- 2 lb fresh apricots minced
- 2 x red onions diced
- 2 c. raisins
- 3 c. brown sugar packed
- 2 1/2 c. cider vinegar
- 1 tsp chili pwdr
- 1 tsp mustard seed
- 1 tsp table salt
- 1/4 tsp curry pwdr
- 1/4 tsp turmeric
- 1/4 tsp grnd cinnamon
- Place all ingredients in large pot.
- Stir over medium heat till sugar dissolves.
- Bring to a boil, stirring often.
- Simmer, uncovered, for about 1 hour till thick.
- Stir more often as it thickens to prevent scorching.
- Pour into warm sterilized jars to within 1/4 inch of top.
- Seal.
- Yield: 3 1/2 pints
