smoked salmon ricotta truffles
- 1 tub (250 g) Tre Stelle Mascarpone
- 1/4 cup (50) Tre Stelle Ricotta
- 1/4 cup (50) smoked salmon, chopped into sm. pieces
- 1 tbsp. (15) capers, drained and chopped
- 1/2 cup (125) Tre Stelle Grated Parmesan
- 1/2 cup (125) fresh dill, chopped
- In a medium bowl stir together the mascarpone, ricotta, capers, smoked salmon and 1/4 cup each of the grated parmesan and fresh dill.
- Refrigerate for 20 minutes.
- Using two spoons form the mixture into 1 (2.5 cm) balls and roll into reserved parmesan or dill.
- Chill until firm, about 10 - 15 minutes and serve.
- Makes approximately 24 truffles.
