smoked salmon ricotta truffles

  1. In a medium bowl stir together the mascarpone, ricotta, capers, smoked salmon and 1/4 cup each of the grated parmesan and fresh dill.
  2. Refrigerate for 20 minutes.
  3. Using two spoons form the mixture into 1 (2.5 cm) balls and roll into reserved parmesan or dill.
  4. Chill until firm, about 10 - 15 minutes and serve.
  5. Makes approximately 24 truffles.
