Shrimp Jambalaya Recipe

  1. Cook and stir onion, green pepper, garlic and 2 Tbsp.
  2. of the oil in Dutch oven over low heat for 3 min.
  3. Add in shrimp and scallops.
  4. Cook stirring frequently, till shrimp is pink, about 5 min.
  5. Remove shrimp mix; reserve.
  6. Cook rice in 1 Tbsp.
  7. oil in Dutch oven over medium high heat, stirring frequently, till rice is light brown, about 10 min.
  8. Stir in chicken broth, salt, pepper, thyme, pepper sauce, bay leaf and tomatoes.
  9. Heat to boiling; reduce heat.
  10. Cover and simmer till rice is tender, about 15 min.
  11. Stir in shrimp mix and the ham.
  12. Cover and cook till shrimp, scallops, and ham are warm.
  13. Yields 8 servings.
  14. Corn muffins go well with this dish.
