Mediterranean Orzo Salad

  1. Whisk together the dressing ingredients and check if it needs salt and pepper.
  2. In a large skillet, fry the sausage over medium heat for 4-5 minutes, breaking it up as it cooks.
  3. In a large bowl, toss the cooked sausage with the remaining ingredients except the spinach.
  4. Toss with the dressing; taste for salt and pepper.
  5. Add the spinach and toss again.
